Cooking with Collins - Berry Brownie Pizza

Hey Fam,

This is not only a delicious desert but a fun desert to make with the kids, let their creativity flow while decorating this amazing desert! You could use all your kids favorite fruit on this one.

BERRY BROWNIE PIZZA

Prep Time: 25 minutes| Cook Time: 25 Minutes | Servings: 8 slices

Ingredients

Brownie

  • ½ Cup Oil, canola or vegetable

  • 1 Cup Coconut Sugar or Granulated Sugar

  • 2 Large Eggs

  • 1 ½ tsp Vanilla extract

  • ¼ Cup Black coffee, prepared

  • 6 Tbsp Cocoa powder

  • 2/3 Cup 1 to 1 Gluten free flour or All-purpose flour

  • 1 tsp baking powder (omit if using All-purpose flour)

  • ¼ tsp salt

Topping

  • 6 oz Cream cheese, softened

  • 2 Tbsp Unsalted butter, softened

  • 1 Cup Powdered sugar 

  • 2 Cups mixed Organic berries

Directions 

  1. Preheat oven to 350F degrees.  Line a 9 inch round pan with parchment paper and lightly grease.

  2. In a medium bowl whisk together oil, sugar, eggs, vanilla and coffee.

  3. Stir in Cocoa powder, flour, baking powder (if using), and salt.

  4. Pour into prepared pan and bake for 25 minutes or until the top is set and the edges are starting to pull away from the side, cool completely.

  5. While brownie is cooling, in a medium bowl beat together cream cheese and butter until smooth. Sift powdered sugar into cream cheese mixture and beat until smooth.

  6. Remove brownie from pan, peel parchment paper from brownie. Place on serving plate.

  7. Frost the brownie with cream cheese topping and arrange berries on top.

Chefs Tips: I used a springform pan to bake the brownies, this made it really easy to remove it from the pan.

If you want to make this without refined sugar, you can create your own “powder sugar” with coconut sugar.  Place coconut sugar in a Vitamix or coffee grinder and blend until soft and fluffy. 

You can use any berries you like, I loved adding kiwi!
