Cooking with Collins - Breakfast!
Hey Fam,
You’ve heard that breakfast is the most important meal of the day. Well, when you eat is important, but also what you eat is just as important!
In the picture above, you’ll see two different breakfasts. The one on the left is a bowl of cereal, with milk, and a glass of orange juice. The one on the right is an orange, two boiled eggs, half an avocado, and slices of bell pepper. As you can probably guess, the breakfast on the right has much higher nutritional value than the one on the left. The breakfast on the right has fewer calories, less sugar, and more naturally occurring and nutrient dense protein, fat, fiber, vitamins and nutrients.
You or your children may not be an eggs and avocado fan, but there are many high protein and low sugar ways to start your day. Here are a few examples:
A quality protein shake with some healthy fats (avocado, coconut, or greek yogurt), whole fruits, and leafy greens
A bowl of organic yogurt or oatmeal with whole fruit and honey
A delicious grits bowl, with scrambled eggs, avocado, and chicken sausage
Avocado toast, on whole grain or ezekiel bread - the sky's the limit with combinations!
And sometimes it’s just great to have waffles or pancakes. Try looking online, because there are some many substitutions you can use to make them delicious AND nutritious

Monkey Jam
Prep Time: 15 Minutes | Cook Time: 30 Minutes | Servings: 20
Ingredients
1 20oz Can Crushed Pineapple
5 Bananas, Thin Sliced
1 ¾ Cups Organic Sugar, Granulated
½ Cup Coconut
¼ Cup Lemon Juice
Directions
Combine all the ingredients in a pot or non stick pan.
Bring mixture to a boil, stirring occasionally.
Reduce heat to low, continue to cook and stir until thickened about 20 minutes.
Remove from heat, cool in pot. Transfer mixture to jars.
Store in the refrigerator.
This jam makes for a great addition to breakfast, and is also a fun Snacktivity. It's delicious on toast, especially over pancakes and waffles!
