Cooking with Collins - Stir Fry!

I'm Collins, the Chef here at Camp Southern Ground! I know a lot of you are cooped up in your houses right now and there's no better time to start cooking family meals with your kids. I'm going to walk you through one of my favorite recipes that the whole family should love, a vegetable stir-fry.

Here's what you'll need:

  • 4 Organic Brown Rice Ramen Noodle Blocks(regular ramen works also)

  • 3-4 Tablespoons Olive Oil(may substitute with vegetable oil)

  • 1 Onion, Thin Sliced

  • 1 Red Bell Pepper, Thin Sliced

  • 3 Cups Broccoli(Fresh or Frozen), Rough Chopped

  • 4 Garlic Bulbs, Minced(can substitute with minced garlic in a jaror1/2 tsp. garlic powder)

  • 1/2 Cup Teriyaki Coconut Aminos or Teriyaki Sauce

  • Salt & Pepper, TT

Directions Cook ramen noodles according to the package instructions. Cook only about 3/4 of the way, strain, rinse with cold water, & set aside in a bowl. Mix in a dash of olive oil to prevent noodles from sticking together.

Bring a cast iron skillet or large sauté pan/skillet to med/high heat. Add in the olive oil and let simmer. Then add in the onions, bell peppers, and broccoli and sauté for 1-2 minutes. The heat is high to get that nice caramelization on the vegetables, so you’ll want to stir frequently. Season with salt and pepper to your liking, but remember the teriyaki sauce will add salt as well. Then drop the heat to medium, and add in the garlic and sauté for another minute. Then add in the teriyaki sauce and cooled noodles, mix and sauté for another minute until thoroughly heated. Add as much sauce as you’d like.

This is a great way to jazz up / put a healthy spin on a classic pantry staple.Feel free to make this recipe your own, by using what you have around the house, and by adding a protein of your choice. Leftover chicken, grilled steak, or sautéed shrimp would be great additions to this recipe.
