Cooking with Collins - Chocolate Zucchini Bread

Hey Fam,

If your campers were with us last summer, they probably remember the Chocolate Zucchini Bread we had for breakfast one morning. This is a camp favorite and parents are always asking me for it, so I’m excited to share it with you today.

CHOCOLATE ZUCCHINI BREAD

Prep Time: 20 minutes | Servings: 12 muffins

Ingredients

  • 1 cup flour

  • 1/2 cup cocoa power

  • 1 tsp baking soda

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

  • 1/2 cup oil

  • 1/2 cup sugar

  • 1/2 cup brown sugar

  • 1 tsp vanilla

  • 1 1/2 cup shredded zucchini

  • 2 eggs

  • 1/2 cup chocolate chips

Directions 

  1. Preheat oven to 350F degrees and spray muffin tins.

  2. Shred and squeeze excess moisture from zucchini. You can watch a video on how to shred zucchini here.

  3. In a mixing bowl, combine oil, sugars, and vanilla.

  4. Mix in eggs and zucchini.

  5. In a separate bowl, combine flour, cocoa, baking soda, baking powder, salt, and cinnamon.

  6. Add dry ingredients to wet ingredients. Mix until just combined.

  7. Fold in chocolate chips.

  8. Pour batter into muffin tins.

  9. Sprinkle some chocolate chips on top of muffins, if desired.
