Cooking with Collins - Blackberry Coconut Oat Bars

Hey Fam,

Summer is quickly approaching, its time to start thinking about those berries.  Berries are a wonderful way to give our kids (and adults) a sweet healthy treat!  

This recipe is great because it has no refined sugar, its quick and easy and can be used as a breakfast or snack.

BLACKBERRY COCONUT OAT BARS

Prep Time: 15 Minutes| Cook Time: 30 Minutes | Servings: 12

Ingredients

  • 3 Each Ripe Bananas, mashed

  • 1 Each Large Egg

  • ¼ Cup Honey

  • 2 Cup Rolled Oats, Old Fashion

  • ¼ Cup Coconut Flour

  • ½ tsp Cinnamon

  • ½ tsp Baking Soda

  • ¼ tsp Salt

  • 1 Cup Fresh Blackberries, rough chopped

  • ½ Cup Coconut flakes

Directions 

  1. Preheat oven to 375 degree F.

  2. Line 9x9 inch baking pan with parchment hanging over two sides for handles.

  3. In a bowl combine bananas, egg, and honey. Mix well.

  4. In another bowl stir together oats, flour, cinnamon, baking soda and salt.

  5. Add oat mixture to banana mixture and stir until combined.

  6. Place half the batter in pan and lightly press into pan.  Sprinkle blackberries evenly over batter.  Add remaining batter over blackberries and lightly press.

  7. Sprinkle top with coconut flakes

  8. Bake for 30 minutes or until the bars are set.

  9. Let cool before cutting.

Chefs Tips: 

If you don’t have any blackberries you could easily use another berry. Have fun and happy snacking! Love from camp!
