Cooking with Collins - Sweet Potato Crust Quiche
Hey Fam,
This crust takes quiche and makes it even healthier. This has become my new favorite crust for Quiche, not only is it easy to put together, it is full of flavor! This can be served for breakfast, brunch, lunch or dinner, you can’t go wrong with this one!
SWEET POTATO CRUST QUICHE
Prep Time: 20 Minutes | Cook Time: 55 Minutes | Servings: 8 Slices
Ingredients
2 to 3 medium organic sweet potatoes
½ pound breakfast sausage
½ cup diced onion
6-ounce baby spinach
½ cup half and half
¼ tsp kosher salt
¼ tsp black pepper
1 tbsp lemon juice
6 large eggs
½ cup grated sharp cheddar cheese
Green onions or chives for garnish
Directions
1. Preheat oven to 350F
2. Spray 9-inch pie plate with nonstick cooking spray.
3. Peel sweet potatoes and slice very thin, using a mandolin if possible. Layer sweet potatoes in pie plate overlapping to completely cover the bottom of the pie plate. For the sides trim potatoes if needed so they lay flat all the way around the side of the pie plate. Continue this until you have 4 to 5 layers thick. After you have all layers done spray potatoes with nonstick cooking spray.
4. Bake sweet potato crust for 20 minutes.
5. While the crust is baking, Brown sausage in a large skillet until fully cooked, remove sausage from pan and set aside.
6. Over medium heat sauté onion in sausage grease until translucent, add spinach and stir until spinach has wilted. Remove from heat. Add sausage back to pan.
7. Whisk together eggs, half and half, lemon juice, salt and pepper until combined.
8. When crust is done remove from oven and increase oven temperature to 400F.
9. Fill crust with sausage mixture, top with cheese. Carefully pour egg mixture over cheese, do not over fill, if you have to much egg mixture, discard.
10. Bake for 25 minutes or until the egg is set in the middle. Cool for 5 minutes before slicing.
11. Garnish with green onions or chives.
Chef’s Tips: You can make any quiche in this crust, vegetarian, with bacon add any meats and veggies you want! If you don’t have half and half, no problem just add whole milk!
